Gluten-Free Banana and Carrot Muffins

Recipes

Gluten-Free Banana & Carrot Muffins with doTERRA Cinnamon, Ginger, and Lemon Essential Oils

If you and your family love eating bananas as much as me and my family, then you will enjoy my banana and carrot muffins. This muffin recipe is both gluten-free and dairy-free. I have found one of the best gluten-free flour. I often use Bob's Red Mill Gluten-Free 1-to-1 Baking Flour (https://www.bobsredmill.com/gluten-free-1-to-1-baking-flour.html?). The best part about these muffins is that they have carrots mixed in with the bananas. For children who are picky eaters and don't like vegetables, ... View the Post

Homemade Pickled Purple Cabbage with doTERRA Basil, Dill, and Black Pepper Essential Oils

Making homemade pickled vegetables is so simple. Throughout history, people have been pickling vegetables, fruits, and meat products in order to preserve food that may otherwise be spoiled. Food preservation through pickling can provide delicious alternatives for fresh fruits or vegetables during the winter season. By pickling your own favorite vegetables or fruits, you can control what ingredients you put into the brine. Our stomach needs to be populated with good bacteria. Studies have ... View the Post

Vegan Cilantro Mint & Pistachio Pesto with doTERRA Cilantro, Lime, and Pink Pepper Essential Oils

Growing up as a second generation Southeast Asian, my family and I are accustomed to eating lots of fresh herbs like cilantro, mint, garlic, and other spices, including chili peppers in most dishes. Typically, pesto is not something that Southeast Asians make because it's not part of our cultural cuisine. We do have many homemade sauces that are used as condiments. Since I grew up in America, we have learned to appreciate the diverse cuisines that make up the cultural diversity of this country. ... View the Post

Gluten-Free Banana and Spinach Muffins with doTERRA Cinnamon Bark & Lemon Essential Oils

This is one of my favorite muffins to make as it is not only gluten-free, but it’s also dairy-free and can be easily tweaked for a vegan version. It does come out green and perfect for a St. Patrick’s Day breakfast or snack for the kids and the entire family! For a vegan friendly version, you can opt out the egg in the recipe and they will still taste good. If you are a doTERRA essential oils user and have cinnamon bark and lemon oils, add the 2 drops of cinnamon bark and 4 drops of lemon ... View the Post

Wild Rice Salad with Roasted Vegetables and Baby Greens

Cooking with organic and gluten-free ingredients do not have to be expensive. With increasing demands of organic and gluten-free foods, these items are now available at local grocery stores and have become more affordable than shopping at specialty food stores. Gluten-Free Banana Spinach Pancakes

I love making spinach and banana smoothie using plant-based milk like almond, coconut, or cashew. I've always loved eating spinach ever since I was a child. I didn't have a choice because my mom would cook spinach for me quite often because it's a nutrient-rich green leaf vegetable.  Growing up with Juvenile Rheumatoid Arthritis, I was very anemic and didn't have a good appetite.  I struggled with eating any type of food and was very thin. So spinach became a staple vegetable in my diet. I guess ... View the Post

As an essential oil user, I’ve found that the be As an essential oil user, I’ve found that the best and safest way to clean fresh fruits is using one of my dōTERRA citrus essential oils that I keep on hand in the kitchen. Today, I’m using dōTERRA Wild Orange 🍊 essential oil and simply add a few drops 💧💧to the glass bowl filled with strawberries 🍓 soaked in filtered water. I like to alternate various citrus essential oils when cleaning fruits and vegetables such as Lemon 🍋 , Lime, Wild Orange 🍊, and Grapefruit essential oils. By using Certified Pure Tested Grade essential oils such as dōTERRA, you can trust that you’re using the safest essential oils on food products. The oil helps release and cleans any microorganisms that may be on the surface of fruits and vegetables.

I’m soaking the strawberries 🍓 in the Wild Orange 🍊 bath for 15 minutes and then drain out the water. I gave the strawberries a final rinse, pat them dry with paper towel before serving. I’m using these strawberries to make a healthy and delicious grilled chicken strawberry salad for lunch today.

Valentine’s Day dinner meal. Made this delicious Valentine’s Day dinner meal. Made this delicious gluten-free and dairy-free crispy chicken thighs in a creamy mushroom 🍄 Marsala sauce. I didn’t follow any recipe and created my own version inspired by the classic chicken Marsala dish. This makes 4 servings. Think I will add this dish to my collection of healthy gluten-free home cooking.

I simply threw everything together last minute with the ingredients that I had, I didn’t even write them down during the cooking process. I do know that the main ingredients are bone-on and skin-on chicken thighs, Bella mushrooms, yellow onions, garlic, Marsala cooking wine, chicken broth, parsley (garnish), and plant-based French style winter truffle spread made by @miyokoscreamery that was purchased from @imperfectfoods.

This is good with a side of brown rice, quinoa, or any veggies of your choice.

I enjoy making this homemade Asian chicken rice po I enjoy making this homemade Asian chicken rice porridge anytime of the year, but particularly often during cold winter months. Being Southeast Asian (half Lao and half Vietnamese), we grew up eating this porridge frequently. It’s simple to make with just a few ingredients (Jasmine rice, 2 chicken breasts, chicken broth, and herbs like fresh cilantro and scallions to serve with). You can make a big pot and feed a family of 6-8 people and still have some leftovers. The best part is that it’s inexpensive to make and gluten-free. I love garnishing the porridge with fried shallots and my mom’s homemade chili 🌶️ oil. Oh, it’s very spicy hot. 🥵
